Beef Wellington, med spr\u00f8 butterdeig, spekeskinke, sennep og sopp….. ca 1 kg indrefil\u00e8t, den tykkeste biten. 3 store sjampinjong ca 12 skiver spekeskinke (parmaskinke eller stranda spekeskinke) Noen str\u00f8k honningsennep, eller vanlig dijon sennep<\/p>\n Kokte sm\u00e5poteter med skall Saus:<\/p>\n 1\/2 liten l\u00f8k 1-2 ss sm\u00f8r<\/p>\n Fres l\u00f8k, hvitl\u00f8k og gulrot i sm\u00e5 biter i litt olje. \n2 plater frossen butterdeig<\/p>\n
\nBrokkoli<\/p>\n
\n1\/4 gulrot
\n1 hvitl\u00f8ksfedd
\n1 liten ss tomatpur\u00e8
\nNoen kvaster timian, fersk
\n2 dl r\u00f8dvin
\n2 dl buljong (1 beger god fond + 2 dl vann)
\n1 ts balamikoeddik
\nca 1 ts sukker
\nsalt og pepper
\n1 ss maizenna + 0,5 dl vann<\/p>\n
\nHa i tomatpur\u00e8 og fres et minutt.
\nHa s\u00e5 i kraft og r\u00f8dvin, sammen med timian.
\nKok minst 15 minutter.
\nSil.
\nVarm opp og spe med maizenna utrr\u00f8rt i vann
\nR\u00f8r til sausen er jevnet.
\nsmak til med salt sukker pepper og balsamikoeddik.
\nPisk inn sm\u00f8ret til slutt, s\u00e5 sausen blir blank.<\/p>\n
\nBrun det raskt i varm stekepanne med olje p\u00e5 alle sider. Legg til avkj\u00f8ling.
\nStek sopp, hakket i sm\u00e5 sm\u00e5 biter i litt olje, til den er brun og godt stekt.Salte og pepre.
\n(Men ikke s\u00e5 godt stekt som min kanskje…glemte den litt, s\u00e5 den ble litt vel brun..)
\nSett til avkj\u00f8ling.<\/p>\n
\nlegg kj\u00f8ttet midt p\u00e5 og pensle med sennep.
\n
\nSkinken legges tett sammen, s\u00e5nn at den passer rundt hele kj\u00f8ttstykket.
\n
\nVed hjelp av plastfolien kler du «p\u00e5» kj\u00f8ttstykket, og lar plastfolien bli med.
\nLegg kj\u00f8lig til du skal steke den.
\nDette kan gj\u00f8res p\u00e5 forh\u00e5nd.
\nVarm opp stekeovnen til 230* med stekeplaten i.
\nTin, (ca 10-15 min p\u00e5 kj\u00f8kkenbenken) og kjevle ut de to butterdeigsplatene med litt mel.
\nPakk rullen ut av plastfolie og plasser den p\u00e5 butterdeigen med «toppen ned.
\n
\nPakk inn rullen og pensle skj\u00f8tene med et sammenpisket egg.
\nSnu rullen og legg den p\u00e5 et lite bakepapir.
\nPensle hele rullen med sammenpisket egg, og skj\u00e6r noen snitt p\u00e5 toppen,
\ns\u00e5nn at rullen steker, og ikke koker.
\n
\nStikk inn et steketermometer i den tykkeste enden.
\nSett kj\u00f8ttet inn p\u00e5 den varme platen midt i ovnen og la det steke p\u00e5 230* i 10 minutter.
\nSenk s\u00e5 tempraturen til 160*, og la det st\u00e5 til det har en temperatur p\u00e5 54*
\n(ca 25-35 min tilsammen)
\nTa ut og la hvile litt….Ikke dekk det, da du vil ha butterdeigen spr\u00f8.
\nServer med poteter, brokkoli og saus…
