Bein ut lammel\u00e5ret. \u00a0Fjern tykke sener, ister og eitler. Skj\u00e6r ut flatbiffen.
\nSkj\u00e6r av «lokket» p\u00e5 flatbiffen, dette bruker du til grytekj\u00f8tt.
\nFlatbiffen skj\u00e6res i 1,5-2 cm tykke skiver rett f\u00f8r steking.
\nBena freses i en panne, sammen med 1 stor gulrot, en bit sellerirot,
\n2 sm\u00e5\/en stor gul l\u00f8k i litt olje. Hell over vann, ca 1,5 l, legg i to laub\u00e6rblad og str\u00f8 p\u00e5 litt salt.
\nKok opp og la simre rett under kokepunktet minst 3 timer, gjerne lengre.<\/p>\n

Bruk ca 5-6 dl av kraften til grytekj\u00f8ttet.
\nResten har du i en panne og koker ned. Dvs la koke uten lokk til det reduseres til ca 1\/3 – \u00bc av opprinnelig mengde.
\nFlatbiffen saltes og pepres,\u00a0 stekes raskt i varm panne, i \u00a0litt olje blandet med margarin. N\u00e5r du har snudd den og du ser kj\u00f8ttsaft sive ut er den klar. Trykk p\u00e5 den med en finger, den skal ikke v\u00e6re bl\u00f8t, men akkurat ha «samlet seg».Legg til side med litt folie over og la hvile.
